WHY THE WÓOLIS ECOSYSTEM

WE BELIEVE ANYONE CAN BE THE CHANGE

Wóolis was founded in 2017 with one prime directive "to provide solutions to problems caused by civilisation".​ if it sounds like a hell of an undertaking well... it is!

That said we began with what we knew and that is food so we began with FOOD WASTE which we believe its the stupidest type of waste as it is completely 100% recyclable.

Our first solution we implemented is to provide a local commercial composting service for restaurants, hotels and bars.

 

Thus making sure their food waste never ends up in landfill producing methane or contaminating our underground river system.

 

Very soon after that, we expanded our reach by trying to solve unsustainable agricultural crisis by starting a farm (work in progress).

Neither made money soooooo.

 

We kept going in by opening our first restaurant in 2018, luckily course of its two year life it became a very popular spot but in 2020 we correctly assumed that the service and restaurant industry was going to be the hardest hit by COVID so we shut it down.

To keep our team employed through the worst part of COVID, we sanitised our huge compost truck & came up with a Mobile Market idea where we sold the produce of the farmers and suppliers that all of a sudden lost their Restaurant clients, and we as a team started brainstorming on products we could make for the truck. This was the birth of Foodie concepts.

The Founder

Though Mauricio Jervis is a cook by trade, he later turned environmentalist/entrepreneur to try and help solve some of the worlds problems locally, So over the past few years Mauricio has been creating an ecosystem of small businesses that provide essential services to the community, whilst promoting environmentally conscious projects so that they too may have the opportunity to flourish.

Being inspired by Sir David Attenborough’s documentaries to love and protect the Natural World, his passion, food knowledge and work ethic comes from the time, where he had the privilege to learn from some of the world’s best chefs.

 

Most Notably:

In England learning from Chef Clare Smyth at Gorgon Ramsey’s 3 Michelin Star restaurant in Royal Hospital Road.

Later in Quebec, Canada with Chef Martin Picard at Au Pied de Cochon Cabane à Sucre and later at Martin's Flagship Restaurant Au Pied de Cochon in the Plateau, Montreal.

Since Returning to his Birthplace in the Yucatán in 2015, Mauricio turned his love for the the natural world and experience in the kitchen into three main businesses:

Wóolis solutions- an environmental solutions company that offers a daily collection service of food waste in Tulum which is turned to compost.

Wóolis Farm- Local farm focused on regenerative agriculture.

Farm To table Restaurant- Although now closed for good this wonderful eatery focused on supporting local producers by having flexible forever evolving menus, as well as becoming a community kitchen during the COVID lockdown for those that where left unemployed.

Wóolis Foodie Concepts - A convenient Market and Restaurant where not only can you find the best produce from conscious talented Mexican artisans and farmers but also a highly curated selection of items for your home and over 70 of our in-house home made product lines.
